Spring Salads

 I'm just beginning to think about leaving behind the thick comforting food of winter in favour of lighter ingredients that are sustaining but dance a little easier on the palate.  I recently came across this healthy chopped salad recipe that ticked all the boxes...protein in the chicken and chickpeas, good fats in the avocado and peppers, lettuce and sweetcorn for crunch and colour.  I made enough to pack away in small mason jars to take to work for lunch...
